Sweet Corn and Ham Egg Frittata

Jeanna Stavas
A fritatta is simply the Italian version of the American omelet.  The ingredients can vary and really include whatever you prefer.  We make quite a few varieties for our bed and breakfast guests at Whispering Pines B&B.

Ingredients

Ingredients:

  • 1/2 cup diced ham diced
  • 2 tablespoons red onion diced
  • 1/4 cup sweet pepper (red, orange or yellow) diced
  • 1/2 cup sweet corn fresh or frozen
  • 1 cup spinach fresh, chopped or torn
  • 1 clove fresh garlic
  • 1/3 cup Smoked Gouda shredded
  • 4 Eggs
  • 1 tablespoon Sour Cream
  • Olive Oil
  • Salt & pepper to taste

Instructions

Directions:

  • Heat broiler to low.
    Dice ingredients and set aside.
  • Heat Olive Oil in nonstick pan over medium heat.
Sauté ham, onions, pepper garlic, salt, until onions & red pepper soften and corn begins to caramelize (about 3 minutes). Add spinach and heat an additional 1 – 2 minutes until wilts.
  • While veggies are sauteing, crack eggs into medium sized bowl and whisk with sour cream until creamy.
  • Turn heat to medium-low and add egg mixture to skillet. Cook eggs, stirring occasionally from the outside-in until eggs are almost set. Remove skillet from heat and sprinkle cheese over the eggs.
  • Place under broiler and watch closely for about 1-2 minutes, until cheese is melted and eggs are firm.
  • Let stand about 3 minutes and cut in half. Garnish with cherub tomatoes and/or your favorite fresh herbs (parsley, basil, chives, ie.)
  • Enjoy with a side of herb breakfast potatoes.

Notes

Note: If serving 4, double ingredients, use a 12” skillet and cut into triangles or for a group service, you can cut into squares.
