Grilled Watermelon Salad

Summertime screams watermelon!  And we love to use it around here for breakfast, luncheons and even as dessert.

One of our favorite ways to treat this tasty melon is to grill it. It can easily make it to the football snack table, too!

Grilled Watermelon Salad

This combination is so flavorful and the quick grill of the fruit really brings out the sweetness yet adds a little smokiness.

Equipment

  • Grill or griddle

Ingredients

  • 8-10 wedges of grilled watermelon
  • 1-2 c strawberries
  • ⅓ cup feta crumbled
  • ¼ cup basil leaves torn
  • 1 lime
  • Kosher salt to taste

Instructions

  • Heat grill to medium.
Cut watermelon into triangle wedges, about .5 – 1 inch thick. Leave rind on for ease of grilling.
Rinse and hull strawberries. Pat dry
  • Add the watermelon wedges in a single layer to grill. Heat until warmed through and grill marks appear, ~ 2 – 3 minutes each side
  • Add whole individual strawberries to grill.
  • When cool to handle, trim rind from watermelon, cut into bite-size cubes and arrange on a platter
  • Sprinkle the feta and basil all over the watermelon.
  • Cut the lime in half and squeeze the juice all over the watermelon and finish with a sprinkle of salt. Serve at once.

Notes

Ingredient amounts can be adjusted to your preferred split of the fruits. Love feta and basil, add more to your taste.
