Ingredients

  • 1 15.5 oz can chickpeas garbanzo beans
  • 1.5 tablespoons fresh lemon juice
  • 1/3 cup fresh basil* rough chopped
  • 1 cup roasted red peppers* rough chopped
  • 1 large or 2 small cloves of garlic peeled, smashed, and rough chopped (approximately 1 tablespoon)
  • 1.5 tablespoons tahini
  • 2 tablespoons Olive Oil
  • 1/4 to 1/2 teaspoon salt to taste

Instructions

  • Drain and rinse beans, save and set aside the liquid from the can for later.
  • Place all ingredients into food processor except for the olive oil and blend until smooth. While processor is running, drizzle in olive oil.
  • If you prefer a less thick dip, drizzle in leftover chickpea liquid until you reach your desired consistency. Add salt to taste.

Notes

*If you don’t have time to roast your own peppers, use jarred peppers and add a little of the oil from it as your liquid; the spices and flavors in it will add to it.
*If fresh basil is unavailable, substitute 2 teaspoons of dried.
